1 cup sugar
3/4 cup shortening, margarine or butter (can reduce to 1/2 cup)
1 egg
1/4 cup molasses
1 cup flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cloves
1 tsp. cinnamon
1/2 tsp. ginger (can increase to 1 tsp)
1/2 tsp. nutmeg (opt)
1 cup flour (or a little more)
Cream sugar and shortening, butter, or margarine. Add egg and molasses and beat well. Add 1 cup flour, soda, salt, and spices and mix thoroughly. Stir in one more cup of flour and shape into balls about 1 – 1 1/2″ in diameter. (If the dough is too sticky, add a little more flour). Roll in sugar and place on ungreased cookie sheets (or flatten balls with bottom of glass or cup dipped in sugar). Bake at 350*F for about 8 – 10 minutes, just until lightly browned at edges. Makes about 24 good-size cookies.
